Studio Unltd chose a textural and modern interior at Simbal to match the simple and balanced nature of Chef Shawn Pham’s approach to crafting his cuisine.  The material palette uses American Ash as a base and the wood is used throughout in various forms and finishes in order to create distinctive settings within a rather ordinary mall parking structure. Being true to the surroundings, the existing concrete of the walls has been left exposed, its cool texture complementing the addition of the warmth of wood.  Three unique spaces have been created which are bound together by the common and familiar material. The jewel and focal point of the space is the open kitchen which offers an unforgettable dining experience of observing the energy and artistry within. The Sunroom dining area allows you to bask in the sunlight or under the twinkling lights in lounge-like banquettes as if you were spending the moment in a friend’s back garden.  A more rich and moody tone characterizes the cocktail bar which is located towards the the back of the restaurant. The back bar wall balances the exposed parking ramp with hints of copper serving as the back drop for this new “speakeasy” in Little Tokyo.
